Abstract
Pineapple (Ananas comosus Merr) is a plant growing in Indonesia. Pineapple peel contains various types of active compounds that have antibacterial effects. This study aims were to prove the antibacterial activity of water fraction of pineapple ethanol extract against Streptococcus mutans, Bacillus subtilis, and Staphylococcus aureus. Pineapple peel extract was made by maceration method. The extraction used 96% ethanol solvent, then the filtrate was evaporated with a rotary evaporator. The ethanol extract was partitioned using n-hexane, ethyl acetate and water successively. Fraction test was only the water fraction. The method of antibacterial activity is broth dilution. The water fractions was tested at concentrations of 20; 25; 30; 35; and 40 mg/mL for Bacillus subtilis, concentration of 40; 50; 60; 70; and 80 mg/mL for Staphylococcus aureus and also concentrations of 110; 120; 130; 140; and 150 mg / mL for Streptococcus mutans. The positive control used is chloramphenicol 125 μg/mL. The lowest concentration that can inhibit the growth of bacteria is called Minimum Inhibitory Concentration (MIC). The results showed a differences in Minimum Inhibitory Concentration values among the three bacteria. MIC values of water fraction of pineapple peel ethanol extract to Bacillus subtillis, Staphylococcus aureus and Streptococcus mutans were 35 mg/mL, 60 mg/mL and 130 mg/mL respectively.
